Dobanjiang - 3 Year Aged Red Bean Paste
Dobanjiang (alternatively spelled toban djan) is an intensely flavored paste made from fermented broad (fava) beans, chilies, salt and seasonings. It’s commonly referred to as the soul of Sichuan cooking and an essential part of the cuisine. Fly by Jing is importing the best version we have tasted of this pantry staple: remarkably deep, savory and spicy—far more so than any supermarket version. It’s produced in Pixian, just outside Chengdu, which is renowned for its dobanjiang production.
Try it in our Spicy Sichuan Tofu and Pork (Mapo Dofu), an easy version of the Sichuan greatest hit (and good enough to turn any tofu hater around), and Taiwanese Beef Noodle Soup, one of that country’s national dishes. We’ll add a spoonful of the stuff to quick stir fries, cooking briefly in the oil to disperse the flavor before adding the meat or vegetables. Or try a spoonful “neat” with rice and a pair of fried eggs for breakfast or lunch. It's strong stuff and a little dab will do you. The paste keeps indefinitely in an air-tight container in the refrigerator, so have no fear of it going bad.
