When conquistadors brought chocolate to Europe, those flavors were replaced by milk and sugar, essentially creating the mainstream hot chocolate we know today. The more traditional chocolate with chili pepper flavor combination, while once commonplace, is now coined "Mexican hot chocolate."

Whisk 3 tablespoons chocolate into 1/4 cup boiling water or milk. It’s important to whisk or blend to get a smooth drinking chocolate, instead of stirring. You can also use less milk or water to get a thick rich, low-sugar sauce perfect for topping desserts.
