Use this marmalade as you would any citrus marmalade-- on toast, swirled into yogurt or ricotta, or as a topping for pancakes or waffles. In baking, it makes a vibrant substitution for other jams or jellies in fillings for cakes and cookies, or as part of a sweet glaze. Thanks to its looser texture, it also makes an excellent addition to sauces, marinades, and even cocktails.
If you would like the flavor of yuzu without the chunky texture, pass the marmalade through a fine mesh strainer and then return the rind to the jar. Voilá, a smooth yuzu jelly, perfect for glazes or sauces.
