Castelluccio lentils can be substituted for brown or green lentils in most any recipe, though we prefer them most simply prepared so their flavor can come though most clearly. A simple bowl of tender lentils dressed with herbs, lemon and fruity olive oil is delicious on its own with a wedge of pungent blue cheese, or is the perfect accompaniment to grilled steak, salmon or chicken.
