Most hot sauces have either a cooked or dried chili flavor or are vinegar-based; we like to add variety to our condiments with the uniquely fresh flavor of Hotaru Foods Ginger Pao. This complex Asian-inspired hot sauce tastes like fresh ginger with an added spicy element. The fermentation process adds a tart dimension to ginger's astringency, and plays up both the fiery and the subtly fruity, floral notes of habanero chili. Hotaru Foods adds carrot puree, whose natural sweetness highlights ginger's sweet qualities. Don't be fooled, though—this hot sauce has a building heat and lingering piquancy, which we like to pair with the umami notes of soy or fish sauce for dipping. Ginger Pao also works well in dairy-based dipping sauces made with Greek yogurt or sour cream. Or add a dash to vinaigrettes as a foil for bitter greens like Swiss chard or kale.
