When making caramel, one of the visual cues to look for is caramel’s tell-tale amber color before cutting off the heat. Using copper pots provides more control—its heat-conducting properties means less residual cooking once the kettle is off the heat. Plus, copper distributes heat evenly, which means caramel is safe from hot spots.
