Pure Indian Foods’ ghee is made only with organic milk from grass-fed cows. That’s it.

We love that every jar of ghee is still cooked and prepared by hand by Nalini Agarwal, co-owner of her family’s company, which traces its roots to 1889 in northern India. Pure Indian Foods also offers a cultured ghee, which is made by churning the cream into yogurt before it becomes butter, for special occasions or anyone who is lactose sensitive.

HOW TO USE

Use this ghee instead of butter when sauteing, frying, or searing. The grassy, buttery taste is especially wonderful as a substitute for oil when searing steaks. Also try using ghee to bloom spices for an aromatic tadka, or in a traditional hollandaise sauce for brunch. Here at Milk Street, we use the stuff daily in a wide range of dishes, from our Indian Carrot Stir-Fry to Kadai Chicken Curry. Use nearly anywhere you’d use melted butter: dipping sweet bits of lobster, eggs or omelettes and especially drizzled atop popcorn (it’s out of this world delicious).
