Makrut limes, the lesser-known member of Thai food’s holy trinity.
While people around the world may recognize lemon grass and galangal, the other flavor agent essential to Thai food, makrut lime pose more of a mystery. Unlike conventional limes, the wrinkled, electric-green makruts don’t offer much juice: they’re prized instead for their aromatic peel and leaves. The peel is sour, floral, bitter and woody with an oily zest, while the leaves are likened to a cross between bay leaf and lemon grass.
