Mexican Mocha plays on the Oaxacan tradition of adding spices and chilies to freshly ground cacao beans for their hot chocolate. Made with just water (no milk at all), there’s a remarkable clarity to the chocolate’s flavor. The spices, and slightly smoky chili, define the chocolate’s flavor, coaxing out its fruitiness and tempering the bitterness without excessive sweetness. We think it’s an equally winning combination with coffee and have created a balanced, mildly spicy sugar blend flavored with warm spices and chipotle chilies (smoked jalapeños). Use it in coffee or to ramp up basic cocoa.
