The indigenous Peruvian chili pepper ají amarillo has been consumed since the time of the ancient Incans and is a staple of Peruvian cooking. Yape's Ají Amarillo Paste has a particularly vibrant marigold color, fresh vegetal aroma and incredibly smooth texture. The addition of sea salt is a perfect counterpoint for tempering the sweet, fruity-floral notes of the chili pepper. We like to use the paste in Peruvian classics such as Chicken, Rice and Cilantro Soup
