It’s filled with everyday favorites and more unique cuts—all leaps and bounds above what you’d get at the grocery store and even many butcher shops. Every cut comes from farms with the highest standards of animal care, and each piece is hand-cut by Porter Road’s expert butchers—taking their time to ensure the quality of every item. Combining the best of Porter Road, each box includes 2 dry-aged sirloin fillets, 2 New York strip steaks, 2 pounds of dry-aged ground beef, 2 pounds of Korean short ribs, 1 pound of sweet Italian sausage, 1 pound of kielbasa links, 2 boneless pork chops and 1 pork shank. The chops sport a rich fat cap that can be seared to make a crispy edge, while the pork shank is melt-in-your-mouth delicious when braised low and slow. Lightly spicy, the Italian sausage is made from lean meat and fat mixed with fennel, oregano, garlic and other aromatics, while the kielbasa—fragrant with garlic and oregano—has a satisfying snap. Every cut comes from farms with the highest standards of animal care, and each steak is hand-cut by Porter Road’s expert butchers, who take the time to ensure the quality of every item. Each box includes 2 dry-aged sirloin fillets (a tender, juicy cut), 2 New York strip steaks and 2 pounds of dry-aged ground beef. The ground beef is made from an assortment of cuts that achieve the ideal meat-to-fat ratio, so it’s far more intensely flavorful than your typical single-cut grind. The box is topped off with 2 pounds of Korean short ribs that are cross-cut from the first four to five ribs, so the thin strips of meat are interlaced with rich ribbons of fat and tasty bone marrow.
