Wadaman Organic Black Sesame Paste

If you like tahini, you'll love this luscious black sesame paste from family-owned company Wadaman in Osaka, Japan. Deeply aromatic with rich, toasty undertones, this condiment can be used in both sweet and savory applications. Etsuji Wada, fourth-generation owner of Wadaman, has been personally roasting the company's sesame seeds for more than 40 years to bring out their nuanced flavor. For this paste, black sesame seeds are meticulously sorted, cleaned and run through a ceramic grinder several times to release all their full-bodied oils and nutty flavor compounds. The final product is 100% black sesame, with a dramatic inky color, wonderfully silky consistency and glossy sheen. It is ideal for adding some earthy depth to dishes, with a subtle pleasant bitterness that you can't get with white sesame seeds.

Many Asian cultures use black sesame for desserts, with good reason—its slight bitterness cuts through rich dairy and balances bitter with sweet like no other. We also like to use this condiment to make a salad dressing: Whisk together 2 tablespoons black sesame paste with 3 to 4 tablespoons of either extra-virgin olive oil or thick whole-milk yogurt. Add 2 to 3 tablespoons lemon juice or other acid, and season to taste with salt, pepper and a pinch of sugar. (If necessary, thin with water.) To this base, feel free to add cumin, coriander, cayenne, za’atar and chopped fresh herbs.
