Prioritizing sustainability and tradition, Japanese producer Sugimoto only agrees to work with independent mushroom growers who use authentic cultivation methods with no additives, insecticides or pesticides. The shiitakes are grown in Japanese forests on sawtooth oak stumps, which will regrow into trees every 15 years as the forest’s lifecycle begins again, so environmental impact is virtually nonexistent.
