Lamson 8-Inch Chinese Vegetable Cleaver

J.K. Adams for Milk Street Walnut Cutting eBoard
I partnered with Vermont company J.K. Adams to design this Milk Street Exclusive eBoard, with two key features designed for home cooks. One, a magnetic spot to hold a chef’s knife. With young kids, I don’t like knives just lying around. A knife-shaped groove in the board keeps blades lying flat, held in place with magnets, and you can turn the sharp edge safely inward, out of harm's way. Second, I wanted a spot to put my phone so I could see it while cooking — I often use the step-by-step photos and videos at the Milk Street website, and this would be the perfect spot, right on the cutting board itself. I could also take phone calls over speakerphone in a pinch. (The slot is also long enough to hold a tablet.) For the material, we decided on a dark walnut wood with a gorgeous grain, durable enough to withstand denting without blunting or dulling your blades. The Milk Street TV Cast Aprons
These neatly designed aprons are the only ones our cooks use on Milk Street TV. They are not a gauzy fashion accessory—I like function in my kitchen with clean designs, without wild colors or cutesy printed messages. These aprons are beautiful, simple and built to last for real cooks, substantial in terms of fabric weight but not overwhelming. The wider-than-standard bibs provides maximum protection from splatters, and the apron itself is the proper length—just above the knee for me. Some aprons are so short that you end up with flour or hot oil on your pants if you’re not careful! For added convenience, the apron's adjustable neck strap uses a metal buckle (similar to a guitar strap) and avoids the issue of loose ends. The thick, durable cotton will soften over time, making for a custom fit, and is machine washable: use cold water and tumble dry low.

Mutti Tomato Vinegar
Similar to red wine vinegar but slightly less sharp, Mutti's Tomato Vinegar has a sweet-savory balance and smooth quality reminiscent of balsamic, with an intense sun-dried tomato aroma. Romertopf 4-Quart Clay Roasting Dish
Popularized in the 1970s, Germany's classic Romertopf (“Roman pot”) is a type of traditional clay cookware designed for braising meat, with a domed lid and roasting dish that are the perfect size for a whole chicken or 11-pound roast. Soaking the lid before each use imbues the porous clay with moisture that's released in the form of steam during cooking, producing tender, juicy meat without the need for constant basting. The bottom dish, meanwhile, has an interior enameled finish that's easy to clean and prevents food from sticking—it's even dishwasher-safe. A few tips from Milk Street: As with all clay cookware, the Romertopf should not be exposed to extreme temperature shock. Our chef's knife blade is 7 inches, not 8. It weighs a bit over 6 ounces, not 10. It has a deeper blade, a huge advantage that makes it easier to rest the flat side of the blade against the knuckles while slicing, which substantially improves comfort and safety. The heel of the blade is scalloped, which means there is room to bring up your fingers for a good grip on the blade for close-up work. It also feels like a knife that you can handle, which won't get away from you like a 20-inch chainsaw or a 12-cylinder sports car. It has enough power to do the job, but it's not overwhelming. The knife also features comfortable, midsize polymer handles and tough high-carbon stainless steel that will hold an edge and resist rust.
