Dark, earthy and moderately spicy, ancho chilies have a complex flavor with hints of dried fruit and red wine. These are some of the freshest, strongest-flavored anchos we’ve had in the kitchen. We use them in dishes like chilorio, or chicken braised in an orange-ancho sauce or to add accent to a spicy Mexican melon salad. Try coating pork tenderloins in an ancho-and-salt spice rub before roasting or puree with fire-roasted tomatoes, sautéed garlic and a spoonful of brown sugar for a quick enchilada sauce.
