HOW TO USE

Treat these as you might a can of chipotle chiles in adobo: Each component (the sauce and the garlic) can be used separately, as well as together. Try using the garlic instead of fresh in a recipe. It will add a richer, deeper flavor, and its natural sweetness will bring out the surrounding flavors. With just one or two cloves, you’ll get a flavor effect reminiscent of having cooked something low and slow for hours and hours. Instead of minced or grated garlic in a dip (like hummus or a yogurt dip), try mashing the preserved garlic for a deeper, caramelized garlic spin on the recipe. The sauce itself is so good and well-balanced that it could easily be swirled into a goat cheese dip or slathering on baked brie and serving it at a party. We also love tossing it with our Chickpea and Cucumber Salad (Chana Chaat). Both parts of the preserve, sauce and garlic, can be used together for a bbq-like effect. Try it slathered on Roasted Whole Cauliflower. Use instead of the hoisin sauce here— you can decide what ratios of sauce and garlic cloves from the jar, but a few tablespoons of sauce and 3-4 smashed garlic cloves would do the trick.
