​Originating in Tunisia before catching on in Libya, Algeria, Morocco and eventually the rest of the world, harissa is made with dried chilies, tomato or roasted pepper and a blend of spices that varies depending on where it's made.

Aside from just serving as a dipping sauce for french fries and fried foods (packing more spice than regular ketchup), this ketchup makes a great glaze for roasted veggies like squash or eggplant—just brush on before roasting. The taste also pairs well with grilled sausages. You can also add a quick dollop to any dish or tomato sauce to get quick, complex umami flavor.
