On a recent trip to Cambodia, we discovered organic Bo Tree peppercorns harvested on a family-run farm. The flavor of Kampot peppercorns is unlike anything we tried before—bright heat and floral, complex, rounded flavor. One of our favorite products from the farm are salted-and-preserved green peppercorns. Similar to capers, the peppercorns pack a bright burst of spicy, floral flavor coupled with a chewy, juicy and addictive texture. Scatter them over pastas or roasted vegetables for pops of contrasting flavor and sharp salinity. We particularly love how they can accent creamy dishes, like macaroni and cheese or pureed cauliflower soup, or try scattered into salads.
