All strawberries come from Oishii, an energy efficient indoor vertical farm. With a 5% acidity level—some can be as harsh as 8%—this vinegar is not too sharp but cuts just enough, helping to balance out berry flavor so it’s never cloying. Use it to macerate strawberries, add to cocktails and sauces, drizzle over cakes, stir into vinaigrettes or toss directly into salads. Very limited inventory available.

Highly regarded in Japanese food culture and revered by chefs, Omakase Strawberries are known for their exceptional juicy texture and perfectly sweet flavor. They were brought from the Japanese Alps to the U.S. in 2018 by Oishii Co-Founder, Hiroki Koga, who built the world’s largest indoor vertical strawberry farm in New Jersey. At 74,000 square feet, the farm mimics the growing conditions like humidity, carbon dioxide levels and wind speed that allow these strawberries to thrive in Japan.

HOW TO USE

Use this vinegar to drizzle into cakes, jams, sauces and cocktails, to macerate fruit, or add into salads, yogurt or dressings. We think it would work well in our Macerated Strawberries with Lime (though you may not need as much sugar since the vinegar is already sweet). Or try a splash of it in our Citrus and Spice Strawberry Compote.
