Bay leaves are used whole all the time, but most people don’t think about them as a spice that can be ground and used like any other. Burlap & Barrel takes fragrant Laurel bay leaves, sun-dries them and then grounds the leaves into this much more versatile powdered format packed with savory, herbal flavor. The leaves are sourced from Denizli, Turkey near the Mediterranean Sea from local farmers, so this type of leaf is especially bright and grassy flavored, but still pairs well with nearly any other flavor.

This fragrant spice pairs well with nearly every savory combination. We love it in spice rubs with other savory spices like cumin, black pepper, coriander and paprika. It also works well with other dried herbs like rosemary, thyme and oregano. It adds wonderful complexity to anything, from an Indian-inspired vegetarian masala blend, to a herbal Provencal-inspired rub for chicken, to a Scandinavian-inspired fish stew. It’s even lovely in desserts. For a summery sweet treat, try adding a pinch to unsweetened whipped cream to dollop on fresh summer berries.
