Casablanca Market Argan Oil $39.95

Argan trees only grow in Morocco, setting down roots in a narrow stretch of desert land between Marrakesh and Essaouira.

And while extracting oil from these hardy trees is a labor-intensive process—it takes 15 hours total to produce just one liter of Argan oil—the women farmworkers who harvest it for Casablanca Market do everything by hand. They remove the fruit from the tree’s thorny branches, carefully remove the flesh and then judiciously crack the center kernel with a stone to release the silken, nutty argan oil.

HOW TO USE

Aside from being a nearly all-purpose finishing oil for fish, veggies and more, argan oil makes a lovely dip for bread. (We’re partial to the traditional Moroccan white bread khobz.) A swirl of the stuff is an incredible complement to stone fruits like juicy cherries or summer peaches—especially if the peaches appear grilled over a bed of greens. Drizzle the oil into vinaigrettes, atop nutty cheeses and truly anywhere you might use a finishing glug of fine EVOO. We also like it on our Chicken Tagine with Apricots, Butternut Squash and Spinach and our North African Chicken Couscous.
