Castillo Di Canena Sherry Cask Olive Oil $29.95

Fifty-year-old sherry aging barrels take olive oil to the next level.

Castillo Di Canena partnered with one of Spain’s most prominent sherry wine produces, Lustau, to create this one-of-a-kind olive oil. The process is labor-intensive. After the sherry wine is extracted from its aging cask, the cask is refilled with Arbequina Extra Virgin Olive Oil, which sits for several days to absorb the lingering flavors from the cask’s previous life.

HOW TO USE

​Use as a dip for breads, drizzled over vegetables like sautéed mushrooms, beef or tuna carpaccio, seafood like clams and oysters or crudos. It complements grilled and baked poultry or pork, as well as fried or roasted almonds and olives. It also pairs nicely with cheese, fresh fruit and dark chocolate.
