Chita Organic Tom Yum Spices $9.95

“Lumlum” is a phrase in the Thai Language’s northern dialect that means delicious—and there’s a reason why Chita Organic uses the phrase to describe their organic Thai sauces and condiments.

After spending years in traditional manufacturing, Chita Organic founder Jaruwan Ovararint wanted to forge her own path only using organic ingredients. After approaching multiple farmers, none were willing to stop using chemicals—so she established her own organic farm in the Li District in the south of Lamphun Province. It’s one of the only certified organic farms in Thailand—which grew from just under 20 acres in 2009 to over 158 acres today.

HOW TO USE

Use 1 packet per 2 cups water for strongest broth to make a Tom Yum soup broth and add your choice of veggies and protein. The quality of aromatics in this also makes it a perfect broth starter for any recipe where you want vibrant flavors like galangal (ginger-like), lemongrass, lime leaves and shallot. This can be a soup boost for a more complex dish, or you can simply simmer the aromatics in chicken broth for sipping on a cold day (or when you have a cold!).

Steep aromatics according to package instructions, then strain. It pairs well with any protein— poultry, beef, pork, fish, shellfish or tofu— as well as any vegetables—tomato, mushroom, cabbage family, green beans and peas, carrots, summer squash, winter squash, peppers, etc.—for a vibrant, quick soup. We also like to use it to make a lightly spicy, aromatic broth in most recipes. Try using it instead of chicken broth in our Soupy Rice with Chicken, Bok Choy and Mushrooms (Pao Fan) (4 cups tom yum broth is 2 packets of spices; can also use 2 cups tom yum broth and 2 cups chicken broth). You can also use 1 cup tom yum broth in place of the coconut water in our Caramel-Braised Chicken with Ginger and Lime.
