Lighter, thinner knives are both easier to handle and to slice through foods. I designed these knives during a meeting in Albacete, Spain, with the folks from Zwilling J. A. Henckels. When it comes to the Nakiri, the blade has a flat shape that is different than the traditional curved edge of a Western chef's knife. Because of this you may find you need to slightly adjust your cutting technique, relying more on push or pull cuts instead of the circular rocking motion used with a Western style blade.
