Down comes the rain…
Cinnamon sticks are harvested and formed as a byproduct of the tropical rains that come during Sri Lanka’s annual monsoon season. The storms start in May and let up several months later, drenching the bark of the cinnamomum verums trees. After the trees dry out, the bark is loosened and the trees start to shed. The bark is then peeled from the tree by hand, rolled into tight quills and air-dried to form cinnamon sticks.
