A modern approach to a Nordic tradition.

Martin Bregnballe, co-founder of Fangst, grew up learning about fisheries from his father, a biologist who helped develop world-class freshwater trout farms in Denmark. Although Fangst and his team are using traditional canning methods, Fangst prioritizes sustainable harvesting high-quality Nordic fish, with a focus on responsible freshwater farming and less profitable seafood sources, like sprats and squid, commonly considered bycatch.

HOW TO USE

We like this right out of the can with good bread, pickles and boiled eggs, or served alongside Asparagus with Sauce Gribiche and Fried Capers and bread. While this high-end product is best used right out of the tin, it can also be swapped in for the fresh smoked trout in Kedgeree and Potato Salad and Smoked Trout with Horseradish and Chives (both recipes would require 2 cans each).
