Although this Filipino Adobo sauce comes in a jar, it certainly doesn’t taste that way. Fila Manila Adobo is slow-simmered and packed with puckery and intense flavor from tamari, coconut vinegar, garlic, bay leaves and peppercorns. It is sweetened with dates, rather than sugar, to add balance, and has amazing umami and depth of tanginess. Chicken Adobo is a hugely popular Filipino dish that can now be made authentically and quickly at home with this time-saving shortcut, but we also like to use this versatile sauce as a marinade, braise or dipping sauce with pork, meat, or hearty vegetables.

Use as a braise with chicken, a marinade for pork and other proteins, try as a stir-fry with vegetables and noodles. The company recommends using a full jar per 1½ pounds chicken, but we found it to be enough sauce for twice that amount. You could also bulk up the recipe with chopped vegetables and diced potatoes.
