Just like fruits do as they ripen, cheeses release gas as it ages. When it’s wrapped in plastic, foil or stashed in a Tupperware, those gases get trapped and can give the cheese a sharp ammonia taste. Use to maintain the texture and flavor of high-end cheeses. Reuse the same bag for the same type of cheese until butterfat stains become visible on the paper, then switch it out for a new one.
Be sure to fully enclose the cheese so none is exposed to air for the best results. You can re-use the bags for the same type of cheese until they look oily. So if you buy a piece of aged gouda every week or so, you can continue using one bag for each new piece until the natural oils of the cheese leave spots on the paper. If you only serve what you plant to eat and keep the remaining cheese cold and in the bag, you’ll be prolonging the life of your cheese and the cheese bag.
