Ripe, organic ume plums are harvested before mingling with red shisho (a Japanese herb) sourced from Wakayama and sea salt from Hygo in a traditional curing process passed down through generations.

All of the ingredients are aged in barrels for one year, giving time for the plum’s natural sour flavor and the sweet aroma of the shisho leaves.
