Made on the island of Groix in southern Brittany, this subtle oil adds the perfect, light seafood finish to dishes without overpowering other flavors. It’s made from a handful of simple ingredients: blue lobster from the Atlantic Ocean, shallots, carrots, garlic and grapeseed oil. The flame-colored oil adds real lobster flavor fast, without having to spend hours simmering seafood stock (or shell out for live lobsters). We like that it isn’t overly fishy, but naturally accentuates lobster and other seafood flavors. Try it drizzled as a finish on seafood tagliatelle, risotto, scallop carpaccio, sushi, tartare or other seafood preparations.
