We test everything we sell. Here’s how we’d use this.
Try dobanjiang in classic recipes like Mapo Dofu. Once you are hooked on its complex, savory flavor you'll want to add a spoonful to quick stir fries, soups, and marinades. Or try a spoonful “neat” with rice and a pair of fried eggs for breakfast or lunch. It's strong stuff and a little dab will do you.
When using in a stirfry, start by cooking briefly in the oil to disperse the flavor before adding the meat or vegetables.
The Mala Market—named after the term for the spicy-numbing combination of chilies and Sichuan peppercorns that defines Sichuan cooking—imports top-grade dried chilies and spices of remarkable quality, with close control over their supply chain. Started in 2016, this family company was started by Nashville resident Taylor Holliday, who first started sourcing Sichuan ingredients so she could cook for her adopted daughter, Fong Chong Havighurst, who came to the United States from China at the age of 11. To this day, the mother-daughter pair regularly travels to China to find unique and authentic Sichuan specialties for the American consumer.
