Inspired by the flavors of the Silk Road, Le Bon Magot's small-batch artisanal marmalades have an astounding depth of flavor. These bright, well-rounded preserves have a strong, floral saffron flavor up front, without an overwhelming aroma; earthy anise notes of caraway and rich honey round out the marmalata, giving it complexity and balance. The sweet-tart quality of the sultanas—a type of golden raisin—is reinforced by verjus, an acidic juice pressed from unripe grapes, while thin ribbons of lemon zest add layers of tart, bright flavor.

Drizzle the preserves over pound cake, or slather them on our Portuguese-Style Sweet Potato Rolls (Bolo de Caco) with a smear of butter to complement the bread's earthy sweetness. Pair the spread with tangy fresh cheeses such as chèvre or ricotta on crostini, or dollop it on thick yogurt. Saffron and caraway lend themselves well to savory recipes: Stir Lemon-Sultana Marmalata into pan drippings for an easy sauce, especially with chicken and pork. Or fold into cooked whole grains or pilaf with fresh herbs; substitute a spoonful or two of marmalata for the lemon zest in our Lemon and Herb Pilaf with Hazelnuts.
