Mala Market Whole DIY Chinese Five-Spice

Chinese five-spice is an all-purpose seasoning blend, used in everything from braises and stews to spice rubs and marinades. Mala Market adheres to the classic combination of star anise, cassia cinnamon, fennel, clove and Sichuan pepper—many other brands substitute this last ingredient for easier-to-find black or white pepper, but Sichuan peppercorns are essential for balancing the sweeter flavors of cinnamon and star anise with savory, citrusy notes. Made specially for Milk Street, this DIY blend preserves flavor better than powdered varieties; simply grind the spices when you're ready to use them and return to the bag for storage.

Five-spice is a powerhouse ingredient for classic recipes such as Five-Spice Pork with Rice (Lu Rou Fan), a classic Taiwanese comfort food. We also like to pair the fragrant blend with warming aromatics, like in our Garlic, Ginger and Five-Spice Roasted Chicken or Roasted Butternut Squash with Ginger and Five-Spice—the natural sweetness of squash pairs well with the floral notes in five-spice powder.

The Mala Market—named after the term for the spicy-numbing combination of chilies and Sichuan peppercorns that defines Sichuan cooking—imports top-grade dried chilies and spices of remarkable quality, with close control over their supply chain. Started in 2016, this family company was started by Nashville resident Taylor Holliday, who first started sourcing Sichuan ingredients so she could cook for her adopted daughter, Fong Chong Havighurst, who came to the United States from China at the age of 11. To this day, the mother-daughter pair regularly travels to China to find unique and authentic Sichuan specialties for the American consumer.
