Sinaloan Chili-Orange Taco Seasoning Sauce
Located on Mexico’s northwest coastline hard against the Gulf of California, temperate Sinaloa State is known as Mexico’s breadbasket and famous for its trademark dish: Chilorio. Bright and bold, ruddy red with a mix of earthy dried chilies, warm spices, herbs and the sharp zing of citrus, it packs a punch (without a spicy wallop). Simmer tender sliced pork or chicken in the sauce and fold into tacos topped with pickled red onions and a piquant Cascabel-tomatillo salsa.

We test everything we sell. Here’s how we’d use this.
In a large skillet, blend chilorio seasoning with 1 ½ pounds sliced pork tenderloin or skinless chicken breast or thigh meat with ½-cup water. Bring to a simmer over medium-high heat, reduce to low and cook until sauce has thickened and meat is just cooked through (registering 165 degrees), about 10 minutes.
Spoon the cooked meat into tortillas, top with pickled onions and salsa to taste. If you like, add fresh garnishes
The Chilorio seasoning sauce is equally good on chicken, pork, tofu, or vegetables (especially sweet potato). Its even good on seafood, like salmon or shrimp.
