In the 1800s, it was the preferred way to preserve and store maple syrup. By boiling the tree sap beyond the point of making syrup, the sugars would become further concentrated, more shelf-stable and easier to transport.

Simply grate this maple sugar as you would a wedge of Parmesan cheese. Use the maple sugar shavings to top autumnal desserts like Maple-Whiskey Pudding Cakes or our Pumpkin Tart. We especially love it on ice cream, pancakes and anywhere else you might be inclined to add a splash of maple syrup or top with sugar crystals.
