Muso From Japan Organic Ponzu

Muso's Organic Ponzu is made by simmering rice wine, rice vinegar and kombu seaweed, then adding citrus juice and mixing with sweet Japanese soy sauce. While it's traditionally a dipping sauce, we like its tangy, salty-sweet and savory notes for cooking as well. The company uses organic yuzu from Japan that has the fragrance of Meyer lemon and tastes somewhere between lime and grapefruit, so the ponzu smells especially bright and almost sweet. Muso layers the yuzo with two other Japanese citrus fruits, sudachi and yuko, which add a balanced, complex tartness. While some misos are simmered with bonito flakes made from tuna, Muso's product is vegetarian without sacrificing any umami richness; instead, shiitake mushrooms imbue the ponzu with savory, meaty notes.

Use ponzu as a bold dipping sauce on anything from sushi and grilled meat to dumplings or Chinese Sesame-Scallion Bread. It's also great in recipes that call for both soy sauce and lemon or lime juice, acting as two ingredients in one. If you find you don't have citrus on hand, substitute Muso Organic Ponzu for the soy sauce in our Sweet Soy-Braised Pork and simply omit the lime juice.
