Some are more ubiquitous in recipes than others, but all are nearly impossible to find fresh in the US. Paqu Jaya's non-GMO, single-estate chili products are made from the crops of small village producers located deep in the heart of Peru. HOW TO USE

Substitute these chile flakes any time you might reach for standard grocery store chili flakes: in pasta, marinades, as part of pickling spice blends, or as a finishing sprinkle over pizza. The slightly earthy, but bright, flavor of aji amarillo will pair well with anything. You can also make and aromatic aji amarillo chile oil for drizzling: add them to a cold skillet with oil and bring them up to a light sizzle over medium heat. Strain or leave the chile flakes in for an excellent crunchy texture.
