This aromatic and beautiful saffron is wonderful in all the familiar applications: paella, risotto milanese, tagines and more. Saffron's unique combination of floral and herbacious pairs with any main ingredient, from chicken to mussels, rice to beans, and even in desserts. To draw out the most flavor from this precious spice you need a combination of heat and hydration: steep the threads in warm water before adding to your dish for the best flavor and color.
If you can help it, don't skip blooming the saffron before using. It's and expensive spice, but treated properly a little bit can go a long way.
