Sugimoto Vegetable Cleaver

This uniquely proportioned Chinese-style knife is often referred to as a “duck cleaver,” which is a bit of a misnomer. It simply means that the blade isn’t quite as tall as the average vegetable cleaver—though it’s still larger than a Japanese nakiri—and may feel less formidable to some cooks than its larger cousin. At 7 inches long, with a short, “barrel” style cherry handle, the Sugimoto can handle most anything outside of heavy-duty butchering and is durable enough to last a lifetime.
