This gently coaxes the golden liquid from the pockets of the honeycomb to preserve its floral and botanical essence, while ensuring a buttery, spreadable texture by promoting a finely crystallized structure.

It’s marvelous in tea or cocktails, for a quick marinade with soy sauce or even as a standalone glaze for meats—just brush it on near the end and cook until it bubbles. A smear on toast is excellent. Or try it with mascarpone and a light sprinkle of cinnamon.
It also makes a great simple salad dressing: In a blender, combine ⅓ cup walnuts, ⅓ cup white miso, 1 teaspoon lemon zest, ¼ cup lemon juice, ¼ cup water, 1 teaspoon Ginger Honey Nouveau, 1 teaspoon dijon mustard and ½ teaspoon white pepper. Blend until the walnuts are finely ground and the dressing is smooth, about 1 minute. Add ½ cup neutral oil and blend until emulsified, about 30 seconds.

Kitchen Notes

This honey comes in a charming tin that easily pops open with a butter knife or the flat handle of a spoon. To close, replace the lid and push firmly in the center until you hear a small click.
