Moruno is a spice blend influenced by Moroccan cuisine that comes from the popular Spanish tapas dish pinchos morunos—pork skewers influenced by the cuisine of the Moors.
Inspired by the popular pork skewer tapas dish, this moruno spice blend is a bright, rich orange with flecks of pale green form a speckling of dried herbs. Oregano and thyme add a fresh quality to it, while a hit of smoky pimento and bright fennel balance out the flavors. Overall, this blend has a wonderful nutty taste with a low, slow burn of heat that’s still pleasant on the palate.

We love this as a dry rub for grilled, sautéed and roasted meats. Try it in place of the dried spices for our Spice-Crusted Pork tenderloin Bites (Pinchos Morunos) or atop our Garlicky Spiced Chicken and Potato Traybake with Pomegranate Molasses—just use 1 tablespoon plus 2 teaspoons of moruno rub instead of the spices called for in the recipe. It’s also wonderful to season olive oil for dipping bread or for sprinkling over hummus.
