Sea moss appears in food more often than you think

While surprisingly tasty on its own as a dried snack or seasoning, sea moss, a dark red plant that grows on both coasts of the Atlantic Ocean, can also be made into a thickening agent. Containing a structural component called carrageenan, a type of carbohydrate, it can be extracted through a boiling process that turns it into a jelly used to thicken and emulsify. It is frequently found in desserts, dairy products, sauces and dressings.

HOW TO USE

Add to steamed or fried rice, pizza, eggs, noodles and popcorn. We think it would be great on our Chinese Chili and Scallion Noodles and our Japanese Fried Chicken (Karaage)—though keep in mind it contains salt, so reduce the salt in these recipes and start adding the seasoning slow to taste.
