And that’s exactly why the chef and cookbook author established Zoe’s Ghana Kitchen in 2010. What began as a small supper club (where Adjonyoh would craft a handful of traditional Ghanaian dishes she learned from her dad) has evolved into a catering and culinary empire, working to forge mutually beneficial relationships with women-run co-ops and farms in Ghana to source single-origin spices. She encourages home cooks to get creative and experiment with adding Ghanaian flavors to everyday dishes.

HOW TO USE

Use the okra salt to liven up fried foods like chicken, fries, homemade potato chips and even fried green tomatoes (one of Adjonyoh’s favorites). It also does wonders as a finisher for vegetables and also sprinkled onto salads or into vinaigrettes. Meat and fish both benefit from the hibiscus salt’s way of bringing out sweetness, and we also love it shaken onto eggs and juicy stone fruits. It’s also at home atop most desserts.

Roasted Spiced Kale Chips
Start to finish: 35 minutes
Servings: 4

Heat the oven to 325°F. In a small bowl, combine ¼ teaspoon ground cinnamon, ¼ teaspoon Zoe’s Ghana Kitchen Ground Cubeb Pepper, ¼ teaspoon Zoe’s Ghana Kitchen Ground Calabash Nutmeg, ⅛ teaspoon ground cloves and a pinch kosher salt; set aside. On a rimmed baking sheet, arrange 1 bunch kale, rinsed, stemmed and dried. Brush one side of the kale leaves with 2 tablespoons extra-virgin olive oil. Sprinkle evenly with the spice mixture. Roast for 15 minutes, then use a spatula to turn the kale. Cook for an additional 10 to 15 minutes, or until the kale is dry and crispy. Serve warm or room temperature.
