Bringing the heat…
Harissa is most often found in Tunisia, Libya, Morocco and Algiers. This hugely popular condiment is offered at most meals to lend some heat and dimension to dishes that range from the simplest, like a piece of bread, to the more complex, like a layered stew. The flavor base of hot peppers, garlic, salt and oil does not change. The additional spice mixture, however, ranges in ratio and combination between cumin, coriander, and carraway. That’s why the taste of harissa varies depending on which country or region in which it was produced.
