Brewing soy sauce the traditional way.
Made from Yoshino cedar trees, the Japanese soy sauce barrels used by Yuasa Soyau Sauce Co. Ltd are over 100 years old. Each barrel used for fermentation holds about six tons of liquid to produce about 3,000 bottles of soy sauce each. Few craftsmen are experienced enough today to produce these special barrels, so most soy sauce companies have switched out the traditional practice for enameled tanks instead. Yuasa Soyu Sauce is one of the few still making their products from the same original method used for centuries.
