Ingeniously simple and efficient to use, the Milk Street-exclusive Wahei Freiz Stovetop Sandwich Press is the better way to make grilled sandwiches—and so much more—at home. Typical panini presses are clunky and large, requiring a plug to work, while old-school Toas-Tite sandwich makers squish crusts and trap fillings. The Wahei instead is a simple, space-saving metal clamshell with no electrical component, simply place your assembled sandwich in one tray, close the other side over it and place the sandwich press over your stove. Your sandwich will brown evenly as both metal plates heat up—if you do want to flip, this won’t make a mess—crisping on the outside and becoming melty on the inside. And we tested it for more than sandwiches: the press makes the ultimate breakfast sandwich (we even fried an egg over easy right in the press first), sears scallops, perfectly cooks chicken thighs, makes cheeseburgers and produces moist salmon with crispy skin. Elevator Coffee Guatemala Guatalon Pacamara Anaerobic Coffee
Elevator Cafe & Commons in Portland, Oregon—the US Coffee Roasting champion of 2023—freshly roasts this natural coffee grown in Santa Rosa, Guatemala. Grown at an altitude of 1700 meters above sea level, these Pacamara beans are harvested at peak maturity. After harvest, they’re fermented in a tank completely sealed off from oxygen for 96 hours—called anaerobic processing—before being dried on a raised bed for 30 days. The process yields a sweet, fruitier taste with some acidity, offering notes of pineapple, strawberry and brown sugar.

Rich and nearly black in color, mole negro is a centuries-old Oaxacan sauce that gets its smoky, deep flavor from toasted chilies and nuts and charred vegetables. Other pre-made mole pastes and powders we’ve tried are bland, chalky and bitter, but Xilli’s Mole Negro is the polar opposite. Prepared by hand in small batches, it’s smooth and decadent with a pleasant moderate heat. Upon first taste, you’ll notice deep earthy notes, followed by hints of bittersweet Oaxacan chocolate. The addition of ingredients like tomatillos, ginger, raisins and a variety of nuts also shine through in this mole, adding complexity and depth but not overpowering one another.
