Aldo Armato Peperoncino- Dried Red Pepper Flakes
The Armato family has been producing fine Italian products, from olive oil and condiments to preserved vegetables and pastas, at their mill in Liguria, Italy, for five generations. And these dried red pepper flakes are in a league of their own—full of flavor and potency that most grocery store versions lack. Fruity and packed with heat (beware to those wary of some spice), each high quality chili pepper used is sourced from Calabria. All peppers are washed and dried in the sun, then blended gently into rustic pieces. Use these flavorful flakes anywhere you want to add a hit of elevated heat, from scrambled eggs, pizza and noodles to vinaigrettes, beans and marinades.
Las Hermanas Pimentón de la Vera Picante DOP - Hot Smoked Paprika
This hot paprika from Hijos de Salvador López has a complex smokiness that comes from a two-week drying process over smoldering oak logs as well as subtle fruitiness imparted by the local red peppers from which it was made. Because of the traditional methods used to produce it, pimentón de la Vera has an intense, penetrating flavor that adds depth to any dish—it does so much more than the supermarket stuff you dust over deviled eggs for color.
Milk Street Flavor Jolt
Spending hours to roast a chicken just for it to turn out bland? One-note steamed veggies? Expensive steak that's only good, not great?
There is a simple solution, one that many home cooks around the world already use every day: umami. That deep, savory flavor that leaves you coming back for more, umami is typically the JOLT you need to transform a dish from mediocre into magnificent.
On our travels, we have found that many cultures use a simple flavor-enhancer (MSG, Maggi Seasoning, kombu, shio koji, etc.) everyday to bring out the full flavor of other ingredients. Over the past year, Milk Street has tested and refined those options to come up with Milk Street Flavor Jolt , a combination of umami-rich spices, flavorings and concentrated seasonings—sourced from Europe to India and Japan—combined into a convenient one-stop flavor enhancer that will coax the best out of every meal.
The secret formula turned out to be more complex than we thought: Dried vegetables (tomato and carrots), umami-packed mushroom powder and alliums like garlic and onion make up the base of this mix, contributing a delicate sweetness that underpins the blend. Red miso powder brings a bit of assertive saltiness while earthy turmeric, mustard and paprika warm up the mix. Not to be forgotten, our secret weapons for extra depth: shio koji powder and asafetida. Both known for imparting rich, pleasant funkiness, the two flavorings round out the mixture. We tweaked flavors and salt ratios until we finally developed a seasoning blend that elevates and amplifies the distinct flavor of anything you put it on. Beef is richer, carrots sweeter and brighter.
Dust it over finished dishes for a flavor boost or blend with salt to season vegetables and rub steaks, chops, roasts and whole birds. It's terrific when used on its own and adds extra dimension to curry blends and chili powders.
Las Hermanas Pimentón de la Vera Dulce DOP - Sweet Smoked Paprika
This sweet paprika from Hijos de Salvador López has a complex smokiness that comes from a two-week drying process over smoldering oak logs as well as subtle fruitiness imparted by the local red peppers from which it was made. Because of the traditional methods used to produce it, pimentón de la Vera has an intense, penetrating flavor that adds depth to any dish—it does so much more than the supermarket stuff you dust over deviled eggs for color.
Oliveri Funghi Porcini Powder
We already love Oliveri’s high-quality dried mushrooms from Piedmont, Italy—now they come in a potent, savory powder. Clean, rich and funky, with a distinct buttery, earthy essence, these porcini from Oliveri are hand-foraged before being dried and pulverized. The powder tastes nutty and meaty, bringing incredible, concentrated umami to anything it’s added to—we love skipping the step of having to hydrate whole mushrooms. Use as a seasoning, add to a spice mix for meat and vegetables or sprinkle into soups, pastas, sauces or risottos.
Bona Furtuna Nepitella (Tuscan Mint)
An herb that grows wild across Italy and rarely grown by farmers, nepitella (also known as calamint) recalls the aromatic freshness of mint with a touch of basil and oregano. It’s been incredibly popular in Tuscany for adding to food and drinks for centuries—particularly in soups and pasta sauces and dishes with meaty, earthy mushrooms. This one, though, is cultivated in small amounts in sun-dappled Sicily by a master botanist using traditional practices. The gently dried leaves have a bold, minty taste with very noticeable earthy herbal undertones: oregano, thyme, lavender basil and licorice. Compared to standard dried mint, it’s stronger and more earthy and herbal. Where mint can be sweet, this is savory. Where mint is bracing, this is earthy.
Villa Jerada Saffron
A few threads can go a long way of this incredible organic saffron harvested from the Moroccan city of Taliouine, high in the country’s Atlas Mountains. While most saffron is cultivated in the Middle-East, with much of the world’s production coming from Iran, but there’s something so special about Moroccan saffron. It tastes of hay, honey and hibiscus flower, with a lovely aroma that hits you the second you open the jar. Inferior saffron threads are often dry and brittle and crushed to bits by the time you crack open the jar (a sign of lacking freshness) but these are fully intact and look like delicate threads of rich crimson. It’s even placed judiciously in the tin in such a way that prevents breakage. Plus, it’s pure saffron with no fillers—some less quality versions are bulked up with dyed corn silks. Moroccan saffron is some of the most fragrant available—a sweet aroma of honey with a pleasant bitterness. It’s remarkably potent, rich, heady and unmistakably saffron.
Trunas 'One Tablet' Ground Ginger
Fresh ginger brings the flavor, but at what cost? It’s a pain to peel, is stringy and takes time to chop. Enter Trunas One Tablet Ground Ginger, the freeze-dried version of minced ginger that actually maintains the potent taste, scent and color in a single cube. With zero additives or chemicals, and unlike grocery store renditions that are murky in flavor and slimy when they defrost, Trunas requires only a few drops of water to rehydrate and resemble freshly minced ginger. Quicker, more convenient and easy to store (no freezer required), use these tablets in soups, stews, noodles, marinades, sauces and anywhere else you’d need freshly minced ginger. Each bag contains about 20-25 tablets.
Trunas 'One Tablet' Chopped Garlic
Minced garlic brings the flavor, but at what cost? It stinks up your cutting board, is sticky and takes time to chop. Enter Trunas One Tablet Chopped Garlic, the freeze-dried version of minced garlic that actually maintains the potent taste, scent and color in a single cube. With zero additives or chemicals, and unlike grocery store renditions that are murky in flavor and slimy when they defrost, Trunas requires only a few drops of water to rehydrate and resemble freshly minced garlic. Burlap & Barrel Royal Cinnamon
Also known as Saigon cinnamon, Royal Cinnamon is a hard-to-find heirloom variety that comes from the mountains of central Vietnam. Our recipe developers agreed it was the sweetest and brightest cinnamon we have ever tasted, with an aroma you can smell from across the room. It's clean-flavored and boldly spicy-sweet, yet with a delicate quality. To fully appreciate its flavor, we recommend trying Royal Cinnamon first in simple applications.
Villa Jerada Ras El Hanout
Literally translated as “top of the shop,” this Ras El Hanout is a warm, complex, savory North African spice blend that can be a go-to rub for chicken, grilling, or simply mixed with Greek yogurt or softened butter. Every pantry should have a jar. Key ingredients in this blend include saffron, rose petals, grains of paradise, fennel seeds, monk pepper, galangal, orris root, white peppercorns, anise star, lavender, ginger, cinnamon, nutmeg, mace, cardamom and allspice.
Burlap & Barrel Buffalo Ginger
This heirloom Buffalo Ginger from the mountains of northern Vietnam has an intense vibrancy and a spicy-sweet aroma like gingerbread. Compared to store-bought versions, it's much more nuanced in flavor, with earthy and floral notes and a cleaner taste overall.
Naogen Crystalized Shoyu
Made from freeze-dried soy sauce from Japan’s Naogen Brewery, this unique Crystallized Shoyu contains one-sixth the amount of sodium of table salt, while still adding a kick of salinity to anything. The flaky crystals melt on the tongue, leaving behind a lovely tasting shoyu: rich, not too salty and a little sweet and earthy, like chocolate. The shoyu is brewed from buttery Enrei soy beans, sea salt and Hakusan Mountain spring water; once freeze-dried into airy flakes, the aromatic crystals add a pleasant kick of saltiness to sushi, grilled meat, soups and stews, toast, tempura, eggs, pasta and vegetables. And because the flakes have a mild sweetness behind their savory flavor, they pair beautifully with dessert: Use a pinch to finish blondies, cookies and ice cream, or anywhere you would use a hit of flaky sea salt. The crystallized shoyu adds extra dimension beyond the salinity of plain salt.
Burlap & Barrel Grenada Gold Nutmeg
Though nutmeg is found on spice-rich tropical islands across the world, we much prefer the nutmeg from Grenada, where it’s so synonymous with their culture that it’s depicted on their national flag. This one is grown on a fourth-generation family farm from old-growth trees (a rarity after Grenada lost much of it’s nutmeg trees in 2004 after Hurricane Ivan) and it’s truly the gold standard. The spice is slightly citrusy and floral, with a woodsy tropical warmth and eucalyptus-like freshness. Each jar holds 6-8 whole nutmeg pods.
Burlap & Barrel New Harvest Turmeric
We love that Burlap and Barrel's New Harvest Turmeric doesn't have the flat metallic bitterness typical of other brands; rather, its bitter notes add woodsy depth to this complex spice. In cooking, this turmeric does so much more than add a yellow tint to curries.
Burlap & Barrel Purple Stripe Garlic Powder
Made from an heirloom variety of hard-neck garlic, which produces a more intense flavor than the typical white soft-neck bulbs you’ll find in grocery stores, this garlic powder has a way of kicking savory flavors up a notch. It’s grown by a farming collective in the northern Vietnam mountains before being hot air dried and ground into a fine powder. The garlic powder is much fresher than most others we’ve tried and along with that earthy allium flavor garlic is known for, there’s also a subtle sweetness, nuttiness and brown butter-like richness that truly makes it special.
Bona Furtuna Erbe di Sicilia
Bona Furtuna’s Erbe di Sicilia is a fragrant combination of rosemary, thyme, oregano and mint—all cultivated in sun-dappled Sicily by a master botanist on the family’s organic farm. The aromatic notes of rosemary and thyme pair gently with earthy oregano and sweet mint, flexible flavors that complement chicken, white fish, pork and vegetables, just as well as soups, stews, flatbreads and dips like whipped feta. Though just a few basic ingredients, the freshness of each herb really sets this blend apart from others like it.
Bona Furtuna Pinzimonio Herb Blend
Pinzimonio is a common Italian staple that blends a pinch of spices into olive oil for dipping bread or crudités. With Bona Furtuna’s masterful spice blend, all you have to do is add the oil. A mix of herbs, spices, garlic, mint and chilies—all cultivated in sun-dappled Sicily by a master botanist on the family’s organic farm—it’s a bright and bold combination for seasoning olive oil or sprinkling over grilled vegetables or meat. The secret of the blend, Bona Furtuna says, lies in the mint grown on the property, which lightens the garlic, black pepper and chili in the mixture with balance and fresh sweetness.
