It helps mill their Danko Rye, a variety with a high starch content that produces excellent loaves of bread. Fragrant and earthy, plus more nutritious than standard all-purpose, it has a lightly sweet flavor with a touch of maltiness. Use it in breads, pastas, pastries, cakes, cookies and crackers.

Delicate yet robust, and more nutritious than a standard all-purpose flour, we find spelt the easiest to swap out for white flour. It works equally well for making soft and spongy baked goods like coffee cake as it does for pillowy pizza dough or fluffy pancakes.

Despite its name, buckwheat is actually gluten-free, known for being an ecologically friendly seed that is regenerative to tired soils. Earthy with a light bitterness, plus more nutritious than a standard all-purpose, this buckwheat flour has a great texture that is superior to other versions we’ve tried. We especially like it pancakes and noodles.
