The melty cheese goodness of raclette shouldn’t just be limited to the Alps. Swiss company Boska, which has been making cheese tools since 1896, has designed a portable, foldable raclette to take just about anywhere for pourable, molten cheese, ideal for a picnic, camping, on a patio or at a party. Using the included tea lights, you can melt your cheese in minutes to pour over potatoes, bread, vegetables or meat. The set comes with a spatula to scrape every inch of cheese onto your plate. And the raclette is safe to place directly onto a barbecue, allowing for an even quicker melt if needed.

This nifty box creates a perfect proofing environment every time—and we all know consistency is key when it comes to getting a good rise on your loaf. It keeps an optimal 60-80% humidity level thanks to the included water plate and allows you to set a perfect proofing temperature (we recommend 85 degrees Fahrenheit) through the heated base plate—plus the structure keeps out any drafts or other environmental factors that would cause change. The proofer is large enough to accommodate several hand-shaped loaves, though when you’re finished using it, it folds completely flat for stress-free storage. And the additional accessory shelf creates even more room inside if you need it. We found that wheat loaves (which can be fickle) rose quicker and more consistently in the proofer, and it also worked wonders to revive a dormant sourdough starter.
Everdure by Heston Blumenthal Cube Grill
We’re the first to admit that most small grills don’t work. It’s hard to get the charcoal started, it’s hard to control the heat and it’s hard to manuever them because of so much heat in such a small area. This little charcoal grill is the exception to the rule. Not only is it easily portable, as it’s made from lightweight and durable steel, but its unique square shape allows you to distribute charcoal evenly and also have the optimum grilling surface area to squeeze in more steaks than a typical small grill. It’s made with a high-temperature finish with chrome handles, which stay cool to the touch even when the grill is in use. And the design of the firebox allows for enough airflow to start the charcoal, but the chimney-like shape protects it from wind as it lights. The grill grates are perfectly positioned, too—we were able to brown steaks quite nicely without burning them. Plus, the grill also has an integrated storage compartment for extra charcoal or grilling tools as well as a built in bamboo wood tray for serving or to use as a cutting board.
Ooni Fyra Portable Wood-fired Outdoor Pizza Oven
The first time I saw this oven at Milk Street and the price I was, to say the least, skeptical. But when our product tester tried it out at home, she came back with a rave review. (And she wanted to keep it too!) Heated with wood pellets, it reaches over 900 degrees Fahrenheit in just 10 minutes and can cook a pizza in just 60 seconds, about as long as it takes at Michael’s in Naples. (I know since I actually timed it during a visit there a few years ago.) Made from stainless steel, it sits on three sturdy legs and is easy to set up and move around. It can take a stone baking board that is roughly 13 inches square which is plenty for homemade pizza. You can also use it to cook flatbreads, meat, vegetables or anything you want to cook quickly using high heat. This contraption may look crazy, but we loved it!

Vermicular Musui-Kamado
The Musui-Kamado induction cooker is downright revolutionary—unlike anything we’ve seen before. It consists of a Musui cast-iron Dutch oven-style pot that is inserted into the Kamado, which is a precise induction heater that cooks from the bottom and sides. Even without the Kamado, the Musui is exceptional. Its name means “waterless” because the lid fits so tightly that little to no liquid is required, so food cooks in its own juices and concentrates flavor for restaurant-quality meals with very little effort. And it’s about half the weight of other enameled cast-iron Dutch ovens.

Nope, you can’t use this charcoal grill indoors, but you can use it at an outside table, on a patio, or at the beach to efficiently cook four burgers or a couple of pounds of steak tips or bulgogi.
