Burlap & Barrel Royal Cinnamon
Also known as Saigon cinnamon, Royal Cinnamon is a hard-to-find heirloom variety that comes from the mountains of central Vietnam. Our recipe developers agreed it was the sweetest and brightest cinnamon we have ever tasted, with an aroma you can smell from across the room. It's clean-flavored and boldly spicy-sweet, yet with a delicate quality. To fully appreciate its flavor, we recommend trying Royal Cinnamon first in simple applications.
Villa Jerada Aleppo Pepper
Fruity, subtly cumin flavored and only moderately spicy, coarse-ground Aleppo pepper is used throughout Middle Eastern cooking. We use it frequently and consider it a valuable flavoring for all manner of dishes that benefit from a little spark of heat. Villa Jerada’s sourcing is impeccable as these flakes are particularly moist and richly flavored.
Villa Jerada Saffron
A few threads can go a long way of this incredible organic saffron harvested from the Moroccan city of Taliouine, high in the country’s Atlas Mountains. While most saffron is cultivated in the Middle-East, with much of the world’s production coming from Iran, but there’s something so special about Moroccan saffron. It tastes of hay, honey and hibiscus flower, with a lovely aroma that hits you the second you open the jar. Inferior saffron threads are often dry and brittle and crushed to bits by the time you crack open the jar (a sign of lackin freshness) but these are fully intact and look like delicate threads of rich crimson. It’s even placed judiciously in the tin in such a way that prevents breakage. Plus, it’s pure saffron with no fillers—some less quality versions are bulked up with dyed corn silks. Moroccan saffron is some of the most fragrant available—a sweet aroma of honey with a pleasant bitterness. It’s remarkably potent, rich, heady and unmistakably saffron.
Jacobsen Salt Co. Pure Kosher Sea Salt
Jacobsen Salt Co.’s Pure Kosher Sea Salt is wonderful as a finishing salt—but it can do so much more. It has a smaller grain than the company's signature flaky sea salt, which makes it a perfect go-to alternative for table salt in recipes: It weighs just a tad less than table salt, so the volumes are almost equivalent, yet it's easier to pick up by hand and sprinkle into dishes than table salt (which is why all Milk Street recipes call for kosher salt). The company hand-harvests every single grain of salt from the Netarts Bay in northern Oregon, so this bright, clean-flavored sea salt has an even consistency ideal for cooking, baking or pickling, in addition to finishing sprinkles.
Villa Jerada Ras El Hanout
Literally translated as “top of the shop,” this Ras El Hanout is a warm, complex, savory North African spice blend that can be a go-to rub for chicken, grilling, or simply mixed with Greek yogurt or softened butter. Every pantry should have a jar. Key ingredients in this blend include saffron, rose petals, grains of paradise, fennel seeds, monk pepper, galangal, orris root, white peppercorns, anise star, lavender, ginger, cinnamon, nutmeg, mace, cardamom and allspice.
Burlap & Barrel New Harvest Turmeric
We love that Burlap and Barrel's New Harvest Turmeric doesn't have the flat metallic bitterness typical of other brands; rather, its bitter notes add woodsy depth to this complex spice. In cooking, this turmeric does so much more than add a yellow tint to curries.
Burlap & Barrel Buffalo Ginger
This heirloom Buffalo Ginger from the mountains of northern Vietnam has an intense vibrancy and a spicy-sweet aroma like gingerbread. Compared to store-bought versions, it's much more nuanced in flavor, with earthy and floral notes and a cleaner taste overall.
Jacobsen Salt Co. Infused Garlic Salt
Jacobsen's hand-harvested sea salt from Oregon has a delicate crunch and releases bright bursts of clean, crisp salinity with each bite; it's perfect for tempering the pungency of garlic, making this one of the most balanced garlic salts we've tasted. The blend is savory and slightly nutty without being overpowering.
Bando Farm Yuzu Salt
A close cousin of the fragrant meyer lemon, yuzu balances punchy citrus with floral freshness. While many flavored salts go too easy on the aromatics, this one makes a true statement—likely because it incorporates the peel, juice and pulp of the fruit and not just the rind like your standard citrus salt. Shaved into airy flakes that melt on the tongue like snowflakes, this elegant salt yields a lightness and delicate crunch that’s not present in denser grains. It’s laced with a pale yellow powder, a clear visual of its vibrant, mild-sour taste. The flavor is unquestionably yuzu: complex and bright, not mellowing into a vague citrusy taste like other similar products, but the even salt itself brings its own nuanced taste to the table. Mined from a 420 million year old salt dome, it offers earthy mineral and peppery notes. Infinitely sprinklable, this seasoning distills the zest and punch or fresh yuzu into a shelf-stable format. Sprinkle atop deep fried dishes like French fries or our Japanese Fried Chicken to cut the richness, or incorporate into a rub for grilled meats to balance the well-browned savoriness with citrus. Shake into soups or into side dishes like our Sichuan Dry-Fried Cauliflower. And if it’s after 5 o’clock, consider using the salt to rim our Chili-Pineapple Margarita.
Burlap & Barrel Grenada Gold Nutmeg
Though nutmeg is found on spice-rich tropical islands across the world, we much prefer the nutmeg from Grenada, where it’s so synonymous with their culture that it’s depicted on their national flag. This one is grown on a fourth-generation family farm from old-growth trees (a rarity after Grenada lost much of it’s nutmeg trees in 2004 after Hurricane Ivan) and it’s truly the gold standard. The spice is slightly citrusy and floral, with a woodsy tropical warmth and eucalyptus-like freshness. Each jar holds 6-8 whole nutmeg pods.
Burlap & Barrel Purple Stripe Garlic Powder
Made from an heirloom variety of hard-neck garlic, which produces a more intense flavor than the typical white soft-neck bulbs you’ll find in grocery stores, this garlic powder has a way of kicking savory flavors up a notch. It’s grown by a farming collective in the northern Vietnam mountains before being hot air dried and ground into a fine powder. The garlic powder is much fresher than most others we’ve tried and along with that earthy allium flavor garlic is known for, there’s also a subtle sweetness, nuttiness and brown butter-like richness that truly makes it special.
Black Garlic Powder
Soft and mildly sweet with savory, rich undertones, black garlic is an umami-packed ingredient that sets itself apart from normal, sharp and pungent garlic. Still not found in most grocery stores, black garlic has grown in popularity in recent years as a simple way to add a complex, earthy-sweet boost to dishes. Using California-grown fresh garlic, The Black Garlic Company, based in Texas, ages their cloves for 60 days to achieve a nearly caramelized depth. The allium is then gently dried to preserve its funky flavor before being made into a powder for an easier and more approachable way to incorporate it while cooking. Rather than tackling a few sticky whole cloves, which can be hard to peel and chop, we love being able to grab it from the spice cabinet instead. Add into sauces, aiolis, eggs, noodles, rice, marinades, meats and more for umami-bomb flavor. A little goes a long way.
Bona Furtuna Erbe di Sicilia
Bona Furtuna’s Erbe di Sicilia is a fragrant combination of rosemary, thyme, oregano and mint—all cultivated in sun-dappled Sicily by a master botanist on the family’s organic farm. The aromatic notes of rosemary and thyme pair gently with earthy oregano and sweet mint, flexible flavors that complement chicken, white fish, pork and vegetables, just as well as soups, stews, flatbreads and dips like whipped feta. Though just a few basic ingredients, the freshness of each herb really sets this blend apart from others like it.
Bona Furtuna Pinzimonio Herb Blend
Pinzimonio is a common Italian staple that blends a pinch of spices into olive oil for dipping bread or crudités. With Bona Furtuna’s masterful spice blend, all you have to do is add the oil. A mix of herbs, spices, garlic, mint and chilies—all cultivated in sun-dappled Sicily by a master botanist on the family’s organic farm—it’s a bright and bold combination for seasoning olive oil or sprinkling over grilled vegetables or meat. The secret of the blend, Bona Furtuna says, lies in the mint grown on the property, which lightens the garlic, black pepper and chili in the mixture with balance and fresh sweetness.
Pure Indian Foods Organic Tellicherry Black Pepper
Considered one of the highest-quality varietals of black pepper in the world, tellicherry peppercorns must come from Tellicherry, a coastal city in Kerala, India. Whereas supermarket peppercorns have a mostly sharp, one-note spice, Tellicherry peppercorns taste warm and nutty with an intense zing, citrusy aroma and notes of tea and sandalwood. The growing and supply of these rare peppercorns is so carefully controlled that they’re hard to find at a price that won’t break the bank—we were thrilled to find that Pure Indian Foods offers one. Hand-selected from late-harvest pepper berries, only 10 percent of these floral peppercorns make the cut to qualify as Tellicherry Garbled Special Extra Bold variety. They’re used in some of the best professional kitchens around the world, appreciated for their complexity and moderate heat.
Hakata Salt Moshio Saredoshio (Japanese Seaweed Salt)
Made from seawater and seaweed straight from the Seto Inland Sea, Hakata Salt’s Moshio “Saredoshio,” or Japanese seaweed salt, brings a distinct complexity that enhances the flavor of typical sea salt. It’s made using a traditional method, in which Hondawara variety seaweed is soaked in seawater, naturally thickened in salt fields under the sun, then boiled down into a fine, easily dissolvable salt. The minimal yet time-intensive process helps preserve each complex mineral, adding even more impact to the flavor of what is dried and harvested off of the seaweed. The salt imparts a combination of delicate bitterness and a punch of briny umami that clings to food nicely; use it to finish grilled fish, karaage (Japanese fried chicken), tofu and carpaccio, or add it to soup, pickles and sushi. Mix into dressings and marinades to boost savoriness, or sprinkle it over ice cream, cookies or muffins if you’re feeling extra adventurous.
